Chia up, it's dessert time! | recipe

Chia seed pudding has been the talk of every Pinterest board, understandable considering how super simple it is to make.


Spring has officially sprung, and London is going through its mini heatwave. Whilst most of us are in lock down mode, we're looking for ways to keep fit, keep sane and keep happy. This super simple dessert perfectly blends exotic flavours with healthy nutritious ingredients.


All for just 135 calories.

 

Ingredients


Serves | 1

  • 1 tbsp chia seeds

  • 125ml coconut milk (I used Alpro's coconut milk)

  • 20g chopped mango

  • 50g mango purée

 

Method

  1. Soak the chia seeds in the coconut milk overnight (or for at least 30 mins). This allows the chia seeds to turn into the tapioca consistency.

  2. Spoon the mango purée into a glass.

  3. Pour in the chia-milk mixture and level out.

  4. Top with your fresh fruit.

Simples.

Tip: For a stylistic serving, tilt your glass and spoon your mango purée into a corner.
