"The hurrier I go, the behinder I get." Chasing Blue Rabbit | review

There are some foods that invoke instant memories, and bubble waffles are one of those for me.


Hong Kong’s streets are lined with a mix of food stalls and shops. Wandering through HK Central, it’s hard not to stop and taste some of the delicious food on offer, be it Chinese jerky, skewers of grilled meat or bowls of sweet tofu. But my favourite of them all was always the bubble waffle. These light and crispy waffles were always the perfect snack to keep me going between meals - and the perfect walk-and-eat companion, as you could just tear off a ‘bubble' when you chose.


Blue Rabbit have taken the bubble waffle and elevated them into delicious sweet treats. The couple behind Blue Rabbit are incredibly friendly and will happily create bespoke combinations to meet your needs. They have created two base mixtures - a chocolate and a vanilla base - which they will readily combine for the ultimate foundation. As I have always known my bubble waffles to be plain, I stick with the simpler styles - a scoop of salted caramel ice-cream drizzled with dulce de leche makes my heart flutter every time.


Originally located outside Southside in Wandsworth, they could then be found at Wimbledon Plaza on the weekend, now I'm not so sure... Wherever they can be found, they are definitely worth a visit!
